Where are your leftovers?

I had Thanksgiving at my daughters, Ill be honest, I ate more than I should have but will get right back on track tomorrow. She sent me home with some turkey (white breast meat only, of course) and heres what I did.
I measured out 3oz and individually froze it in the snack size zip lock baggies.
Now I have a perfect amount of turkey for a sandwich, or meal. I have enough for about 8 meals! She also gave me the carcass so thats in the freezer for me to make soup with. I like to boil it a day ahead and let it sit in the fridge over night so I can skim the fat off in the morning. Add a couple of cans of low fat, low sodium chicken broth, small bag of frozen mixed veggies, spices of your liking and you have a delicious soup. You can even add one of your 3 oz bags of turkey to the bowl and have plenty to eat or a turkey sandwich on the side, guilt free!
Well, thats what I did today.... I just thought Id share an idea or two.
