Question Tell me about Spaghetti Squash

I'm Italian. Food is my family's passion, especially pasta. Obviously I'm not going to be eating it once I start my weight loss journey ....Oh how my eyes fill up with tears every time I think about not having it.
I keep hearing about this spaghetti squash and I know absolutely nothing about it. I don't think I've ever had squash so I have no idea what it tastes like.
Anyone that makes it, can you please tell me more about it and how you make it. I know it's very popular in the Biggest Loser book.

To those of you that still allow yourself pasta......how much do you have? 1 cup (cooked)?

I just started eating squash myself. I usually have it mashed. No idea if it is summer or spring. I want to make the restaurant version; only healthier...cinnamon, splenda, and a "fake" butter spray. If I can eat squash and love it..anyone can.

I've eaten it -it really has the texture of spaghetti. Directions should be on it of how to cook, but bascially I've cut it in half, sprayed a touch of pam in it, then place it on a cookie sheet (middle down) until soft, ~45 min I think. It's in the BL book how to use it too. Oh, and you're supposed to puncture it with a fork too a bit. If this is clear as mud, check the book. It's probalby in there better than I described.

I love all types of squash, but spaghetti squash really spuprised me. It tastes quite different, but mostly it has a texture like noodles, goes well with sauce, and is so much healthier. I have one in my fridge right now actually. Hope you enjoy it! I understand being Italian you don't want to be left out -and this is a really great alternative.

I personally think it's a lot more filling than speghetti and it doesn't sit as heavy. I'm not a huge fan but I will eat it when I get the taste for pasta.

1. Cut squash in half, lengthwise
2. Remove seeds with spoon
3. Cover each half with plastic wrap
4. Microwave both halves together on high for about 12 minutes
5. Let stand until cool enough to handle
6. Poor off excess water
6. Scrape with fork to form spaghetti and put into a pan
7. Add the sauce (only as much as needed) to the spaghetti squash
8. Cook until heated
SERVE AND ENJOY!

--- Other options: Add Kraft Fat Free Parmesan Cheese to taste

Note: You can also use a low fat butter alternative (e.g., Smart Balance, I Can't Believe It's Not Butter, etc.) instead of the sauce.
