This is so wonderful for fall type dishes and so easy to make!
You can make as much as you want but this recipe is for 2!
Preheat oven to 350
Take one Zuchini cut the ends off and boil for 10 minutes (only)
While Zuchini is boiling:
1. grate low fat chedder, mozzarella, and or Jack cheese (either one or all is fine)
2. Crush about half a bag of unsalted low-fat crackers
3. cut up 1/2 onion
4. cut up 1/2 red or green peper (depending if you like sweet or not) (this is optional as well)
5. one can of chicken (precooked) or Tuna (these are very low in fat and high in protien)
Now after the ten minutes take Zuchini and cut it long way (so you have 2 boats)
scoop out the insides and place the "meat" of the zuchini in a bowl.
saving the hollowed out boats set them aside.
Mix all the above ingredients in with the "meat" of the zuchini, saving some of your cheese and crackers for topping. (you can subsatute crackers with light bread crumbs)
Add a pinch of salt. pepper, and garlic for taste.
Now scoop the mixture into the hollowed boats
Top with cheese and crackers or just cheese (depends on your taste buds)
Bake for 15 minutes or until cheese looks good and melted and slightly golden.

I made up this recipe when my grandma used to bring me tons of zuchini from the garden and I needed to think of good lots of healthy ways of cooking it.
