made a new recipe the other night that was a winner for both me and hubby! '
Took about 14 jumbo shrimp and marinated them in fat free Italian dressing for 10 minutes.
Put them on the grill for about 5 minutes.
With that made a couple servings of brown minute rice. in the minute rice (before cooking) cut up a zuccini and red bell pepper (I'm not a fan of either but I actually ate them). Cooked the minute rice in low sodium chicken broth instead of water.
Put a serving of rice on the plate, topped it with a serving of the grilled marinated shrimp and chopped some green onions to throw on top.
It was delicious!! Not a meal I would want to eat every night - but it was a wonderful break from always eating chicken breast
