Chicken & Vegetable Laksa

Ingredients
Olive oil
1 red capsicum
½ small red onion (fine chop)
125g vermicelli noodles
2 tsp lemon grass (fine chop)
375ml Lite Coconut Milk
1 tsp red chilli (fine chop)
2 tsp Fish Sauce
1 tsp minced ginger
1L hot water
500g skinless Chicken breast – sliced
1 tbsp chicken stock powder
1/3 cup coriander leaves
1 bunch broccoli -cut into 1/3
Method
Oil large Saucepan. Heat pan over medium heat. Add onion and cook for 3 mins or until soft. Add lemongr**** chilli and ginger. Cook, stirring for 30 sec. Combine hot water and stock powder in a jug. Pour over onion mixture and bring to the boil. Add vegetables and chicken. Simmer uncovered for
2 mins or until chicken is cooked. Stir in coconut milk. Stir in Fish sauce and noodles. Heat gently until warm. Serve topped with coriander leaves!
