Threw together a new recipe

Last night I was deciding what to make cause I was so tired of the same ol' thing.
We had bought a box of plain couscous at the store (hadn't tried it yet, so we had no idea how it would be)

Onion
Fresh mushrooms
Can of diced tomatoes
minced garlic
misc spices depending on my mood (last night used oregeno and basil)
2 4oz chicken breasts cut into bite size pieces
1 can low sodium 99% fat free chicken broth

Made 2 servings of couscous according to the directions on the box using 1 cups of the chicken broth.
sauted the onions and mushrooms in one pan with a little chicken broth added some minced garlic and other spices
sauted the chicken breast in another pan with a little chicken broth added some minced garlic and other spices
after the chicken was cooked, added the mushroom/onion mixture to the chicken pan and stirred.
Drained can of diced tomatoes and added them to the chicken/mushroom/onion mixture - cooked till heated
pour that over the couscous
My hubby said I can make that for him anytime! It was really good

Yes is it, but it tends to be healthier, and it doesn't take much to satisfy you. I love it, super easy to fix and comes in lots of flavors like garlic or toasted pinenuts.

My hubby wanted to buy cous cous after one of the recent episodes of Biggest Loser where they stocked the kitchens at their homes and he said couscous in their cupboard LOL it's been in our cupboard since then

What section of the store can you find couscous? rice area? I'll have to try it sometime.

It is in the rice area, generally in a box. It's really good and easy to cook. It tastes good plain, but it's also easy to season and experiment with. BTW, this recipie sounds great -you can cook it for me anytime too! :P
