Asian Pork Salad in Lettuce Cups

Ingredients
½ cup Rice
3 Green Shallots (Chopped)
½ tsp Chicken Stock Powder
2 tbsp Fresh Coriander Leaves
½ cup Hot Water (125ml)
2 tbsp Chopped Mint Leaves
500g Lean Pork Mince
1 tbsp Fish Sauce
230g can Water Chestnuts (drained/chopped)
1 Cucumber (diced)
1 Carrot (peeled/grated)
100g bean sprouts
2 tbsp Lime Juice
1 Iceberg Lettuce (Separated/washed)
1 tbsp brown sugar
Method
Cook Rice according to packet instructions. Dissolve stock powder in
hot water and combine with pork in a non-stick frypan over medium
heat. Cook for 10 mins or until pork is tender. Remove from heat. Add
rice, water chestnuts, green shallots, coriander, mint, carrot, and
cucumber. Mix to combine. Whisk fish sauce, lime juice, and brown
sugar in a jug. Pour over Pork mixture. Refrigerate Mixture until
chilled. Fold through bean sprouts. Divide mixture among 6 lettuce leaves.
