Spicy and Cheesy Toasted Pumpkin Seeds
This spicy and crunchy protein-rich snack stashes and packs well.
1 tablespoon egg white
1/8 teaspoon salt
1/4 teaspoon salt
1/4 teaspoon garlic powder
2 teaspoons soy sauce
1/4 cup very finely and freshly grated reduced-fat Parmesan cheese
2 cups raw, hulled pumpkin seeds
Preheat oven to 350 degrees. In a small mixing bowl, beat the egg white with a whisk until soft and foamy. Except for the pumpkin seeds, add the rest of the ingredients and combine thoroughly. Spread the pumpkin seeds in an even layer on a parchment-lined baking sheet. Coat with the egg-white mixture. Bake 13–15 minutes until the pumpkin seeds pop. Let them cool completely and store in a covered container.
