Low Fat Desserts?
I would like to make some low fat cookies (with like barely any sugar or carbs) or a low fat pie.
I was wondering if anyone here had any suggestions?

I have looked for low fat cookies at the store or a low fat mix...but I don't think it exists
Although I was looking online and these don't seem too bad.

Ingredients

Directions:
Heat oven to 375 degrees. Mix sugars, margarine, vanilla, and egg white in large bowl. Stir in flour, baking soda, and salt. Stir in chocolate chips.
Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 8 to 10 minutes or until golden brown. Cool slightly; remove from cookie sheet. Cool on wire rack.
Cookie: 60 calories; 20 calories from fat; 2 gram fat; 0 mg cholesterol
**Seems like you can't avoid the sugar though...maybe sweetener would work instead? Hmmm

I think this one is similar
Chocolate Chip Cookies (low fat)
rec.food.recipes/Megan Perks (1997)
about 2 1/2 dozen cookies
This cookie has half the fat and half the chips of ordinary chocolate chip cookies. Miniature chips give the illusion of more chips because they distribute so well.
1/2 cup granulated sugar
1/4 cup packed brown sugar
1/4 cup margarine, softened
1 tsp. vanilla
1 egg white or 2 Tbsp. egg product
1 cup all purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup miniature semi-sweet chocolate chips
Heat oven to 375 F. Mix sugars, margarine, vanilla, and egg white in large bowl. Stir in flour, baking soda and salt. Stir in chocolate chips. I know a lot of people use splenda in their baking, but I don't think I could deal with the taste.

Low Fat Peanut Butter Cookies
45 calories and 1.5 grams of fat per serving.
To make this yummy treat, you will need the following ingredients:
1 can (14 oz.) low fat sweetened condensed milk
3/4 cup reduced fat peanut butter
1/4 cup fat free egg substitute
1 teaspoon vanilla extract
2 1/4 cup reduced fat biscuit mix
1/4 cup sugar
Directions:
Mix the milk, peanut butter, egg substitute and vanilla with a mixer on a low setting until smooth. Add the biscuit mix and blend well. Cover and chill for at least 3 hours.
Preheat your oven to 350. Drop the dough by teaspoonful 2 inches apart on a cookie sheet coated with nonstick spray. Sprinkle with sugar and bake the cookies until lightly browned about 6-8 minutes.

I don't like the Splenda taste either. I use to have a coworker that uses 1/2 splenda and 1/2 regular sugar in her recipes... It not as "healthy" as if she were to use just splenda, but I enjoy the cookies.

I got this recipe from a co-worder. I haven't tried it yet but I love Peanut butter!!!!
Peanut Butter Bars
1 1/3 cups All-purpose flour
1/3 cup Whole-Wheat Flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1 1/2 cups Quick-Cooking (not instant) rolled oats
3/4 cup Reduced Fat Peanut Butter
3/4 cup Packed Light Brown Sugar
1/2 cup Granulated Sugar
1/2 cup Light Stick Butter, softened
2 Large Eggs
1/3 cup Low-fat Milk
Preheat oven to 350. Line a 9 x 13 baking pan w/ foil, then spray foil w/ non-stick spray.
Whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt in a bowl. Then, whisk in the oats and set aside.
With an electric mixer on medium-high speed, beat the peanut butter, brown sugar, granulated sugar, and butter in a large bowl until well blended. Add the eggs, 1 at a time, beating well after each egg, then beat in the vanilla.
At low speed, add 1/2 of the flour mixture, then 1/2 of the milk, beating just until incorporated. Repeat with the remaining flour mixture and milk, beating until well mixed. Spread the batter in the pan. Bake until golden at the edges and a toothpick inserted in the center comes out clean, about 30 minutes. Transfer to a cooling rack.
Icing Ingredients
3 Tbsp Reduced Fat Peanut Butter
1 1/2 Tbsp Light Stick Butter
2/3 cup Confectioner's Sugar (powdered sugar)
1 Tbsp Low-fat Milk
Combine peanut butter and butter in a medium microwavable bowl. Microwave on High until butter is melted, about 30 seconds, then whisk until smooth.
Add powdered sugar and mild, then whisk until smooth.
Immediately spread the icing evenly over the hot peanut butter bars as soon as they come out of the oven.
Allow to cool completely, then cut into bars
Weight Watchers Points Information
24 bars - 4 pts each
18 bars - 5.3 pts each
36 bars - 2.6 pts each
