FauxTatoes

If you're following the biggest loser book and are missing the unallowed white potatoes you could try these. I ate these all the time when I was doing atkins a year or two ago. WARNING: if you don't like cauliflower you probably won't like these, obviously they don't taste exactly like mashed potatoes, but they're a good replacement.

FauxTatoes
16 ounce bag frozen cauliflower
2 tablespoons water
1-2 tablespoons butter
Salt and pepper, to taste

Place frozen cauliflower in a casserole dish with a lid; add the water. Cover and microwave on HIGH about 8-10 minutes, until very tender, stirring occasionally. Drain well (i normally use a salad spinner, cauliflower really seems to absorb a lot of water) and put cauliflower in food processor. Process until smooth and creamy. Move to a serving bowl and season with salt and pepper and butter.

Makes about 4 servings
