I love making mine with onions and green pepers, but your right, making it with only 2 egg whites can be difficult, excellent idea sharing a larger batch with your son, makes it a lot easier to make.

My friend from india makes scrambled eggs by adding some chili powder and maybe some other indian spices to it. I think these would go a long way in spicing up egg whites and add a bit of variety to breakfast.

I like the idea of adding a little chili powder - that would really spice things up.
For as much as I like ketchup I can honestly say I have never tried it on eggs.

My husband makes my eggs - he will add salsa and cheese to it. It always tastes good!
