Cajun Shrimp

Tried this tonight--it was awesome! The recipe said it was for 2 people, but three of us ate it and there were leftovers.

2 T olive oil
1/4 C chopped onion
1 large clove garlic, minced
1 red or green bell pepper, diced
2 ribs celery, thinly sliced
1 can stewed tomatoes
1 can tomato sauce
Tabasco sauce to taste
1/2 tsp salt
1/2 tsp coarsely ground black pepper
1/2 tsp celery seed
1 tsp dried leaf thyme
1 and 1/2 T parsley
1 pound shrimp, shelled and deveined

Saute onion, garlic, pepper, and celery until tender in olive oil in large skillet. Add tomatoes, tomato sauce, Tabasco and seasonings. Simmer over low heat, stirring occasionally, for 30 minutes. Add shrimp and cook until shrimp are pink, about 8 to 10 minutes. Serve over a healthy sort of pasta or rice.
