Suzanne Somers' Whole Wheat Popovers
I tried this recipe that I found on the Web tonight, and it was great. These popovers are very light and tasty. I found it was easiest to get them out of the pan if I let them cool a few minutes first.
1 C. nonfat milk
1 T melted butter
1 C whole wheat flour
1/4 tsp salt
2 large eggs
Makes 8 popovers.
Preheat oven to 400 degrees F. Butter a popover or large muffin pan. In a large bowl, beat the milk, butter, flour and salt together until smooth. Add the eggs, one at a time, being careful not to overbeat them. Fill the popover or muffin cups 3/4 full. Bake for 15 minutes. Without opening the oven door, turn the heat down to 350 degrees F and bake an additional 20 minutes. Serve immediately.
