White Bean Thai Basil Chicken Chili
A friend made this for my family tonight and it was awesome!
Ingredients:
1 medium onion, chopped
2 cloves garlic, finely chopped
olive oil or broth for sauteing onion and garlic
2 cups chicken cut into half-inch cubes and boiled
1 32-oz can Great Northern beans
4 cups chicken broth
1 medium tomato, seeded and chopped
1 tablespoon fresh cilantro, finely chopped
1 tablespoon fresh Thai basil, finely chopped (or regular basil if no Thai basil is available)
Juice of 1/2 lime
1 and 1/2 teaspoons chili powder
1 and 1/2 teaspoons cumin
1/2 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon red chili flakes
Directions:
1. In a 4-quart pot, cook onion and garlic in broth or olive oil over medium heat until onion is tender.
2. Stir in remaining ingredients and bring to a boil.
3. Reduce heat, cover and simmer for 1 hour, stirring occasionally.
4. Serve in a bowl by itself or over cooked rice.
Makes 8 servings Per-serving nutrition (without rice): 250 calories; 8g fat; 18g protein; 7g fiber; 27g carbohydrates. Cost less than $1.50 per serving.
