Stuffed Chicken Breasts

4 skinless, boneless chicken breast halves
salt and pepper to taste
1 (15 ounce) container part-skim ricotta cheese
1 (10 ounce) package chopped frozen spinach, drained
1 clove garlic, minced
2 eggs, beaten
1 (8 ounce) package shredded low-fat mozzarella cheese, divided
1 (16 ounce) jar sugar-free spaghetti sauce

Directions
1 Preheat oven to 350 degrees F (175 degrees C).
2 Season chicken breasts with salt and pepper to taste.
Slit open on the side for stuffing; set aside.
3 In a medium bowl, combine the ricotta, spinach, garlic,
eggs and 3/4 of the cheese. Mix well and stuff each breast
with 1/4 of the mixture; secure with toothpicks and place
stuffed breasts in a lightly greased 9x13 inch baking dish.
Pour sauce over all and sprinkle with remaining cheese.
4 Bake at 350 degrees F (175 degrees C) for 45 to 60
minutes, or until chicken is cooked through and juices run clear

Sounds very yummy!!

Have you actually made these yourself? How is the sugar free spaghetti sauce? I guess I didn't even realize that spaghetti sauce had sugar in it...

Thumbs up Stuffed Chicken Breasts

Beth sounds great! I had stuffed salmon tonight and it was fantastic! I think I will try it without the spaghetti sauce and extra cheese on top first to keep it as low cal as possible. It is hard to find sugar free spaghetti sauce at my store. Thanks, and keep the recipes coming-it has really given me a variety and kept me from getting bored with it all!!

Red sauce does have sugar! I always thought it was perfectly healthy until I started South Beach a couple years ago. I like the sugar free version of the spaghetti sauce

Yummy stuffed salmon Do you have that recipe? That's a very good idea kepping it low cal, the recipes I am adding right now are mostly South Beach (they are my personal favorite) but I am getting a variety of recipes low cal, low fat, ect that will be popping up here over the next couple days so stay tuned

Stuffed Salmon

Actually I bought it ready to prepare from the seafood counter at my grocery store. It looked so good and I have been hearing a lot of great things about salmon lately. It seemed to have mostly crab, a little bit of rice and eggwhites in it with some parsley flakes on top. It seemed that the salmon filet was wrapped around the mixture instead of stuffed. It cooked up very nicely, only 15-20 minutes in the oven at 400.

I would think that you could come up with the same sort of recipe like the stuffed chicken, using cottage cheese and maybe even crab meat. I was good!

South Beach

It is neat to see so many interesting recipes coming from the South Beach Diet, when I read the book and I have seen the ready made products at the grocery store it seemed like they are very restrictive about what you can eat. The recipes you shared all sound delicious!

I am definately trying this one. Agghh, reading these delicious recipies is making me so hungry! I wish I knew how to cook like you Beth -all these recipies are fantastic. I'm mostly eating salads and Campbells select soups.
