My husband and I have another couple over to play Scrabble every few months, and it's a fun opportunity to try out some gourmet recipes because we all enjoy them. It's our turn to host tomorrow night.
I decided to see if I could come up with a menu that will be exciting for everyone but where I can also eat reasonably.
For a main dish I'm going to make portabella mushrooms stuffed with a low fat sausage and peppers.
Side dishes will be scalloped yams--I found a recipe that uses boiling water instead of the usual cream or milk, and I can cut back on the recommended amount of butter. Also a spinach salad with pears, a little blue cheese, and a low fat raspberry hazelnut vinaigrette.
I'll be using my bread machine to make a honey whole wheat loaf.
Beverage will be an iced green tea with lemon, sweetened with Splenda.
The desserts will NOT be low fat, but I'm just going to have a sliver of each and send the leftovers home with our friends and/or my stepson.
