Widdlecuddles - March Week 3

What? The weekend is over already? Where did it go?
Saturday - the morning started out rough. I was putting away some dishes, opened up the cupboard and our falls a full plastic bottle of white vinegar. When it hit the counter the lid popped off and it splatter on me and the counter and SOAKED the dog Poor Buddy. So into the bathtub he went. Then about 30 minutes later our neice arives to drop off the kids. We were babysitting our great neice and nephew. Our nephew is almost 2 and he was sick. Diahria and vommiting - not fun. We really didn't do much of anything for the rest of the day> I cleaned a little and we vegitated in front of the boob tube.
Sunday went to church and then to Home Depot to buy a few more shelves for the laundry room. Sunday is cooking day for the week around our house. I made hubby's tuna salad for the week, my crustless quiche and my lunch.
Didn't exercise one bit this weekend other than chasing my nephew around with a towel.
Today is another day. Monday. Stayed up late last night keeping track of tornato warnings and where they were headed. Forgot to set the alarm so got up too late to exercise. Stepped on the scale and up a 1/2 a pound
Got to work and warmed up my quiche. ICKY!!! So breakfast for this morning was an orange. Thank God I didn't have any money with me or I would have been raiding the vending machine for sure. Thankfully my lunch is good.
Working late tonight which makes for a longggggggg day. Picking up Subway for dinner and then we get to babysit again. YIPPEE!!!
back on track eating wise... now I just need to get the exercising going again.

Hi Nicky,
Has your husband gotten up yet to work out with you? I hope you can manage it sometime -you'll both enjoy it so much more together. I miss doing that with my guy and hope I can get it started again this week. We had those tornado warnings too -and got a violent windy downpour with it. Glad you didn't get hit.

Hi Nicky! From reading your message it sounds like you are doing pretty good...you sound like you are in good spirits regardless of what happened over the weekend. I'm surprised that she left the children knowing that her son was so sick...I couldn't do that.

I like the idea of cooking on Sundays for your week...what type of food do you cook for the week? Is it just for lunches or are your dinners included? I know that when I get my chicken tonight I plan on cooking some up for my salads for this week.

I hope that you can get the workouts started up again soon. I understand how you can get busy and not get them in. Best wishes - hope your hubby is right beside you, too.

Yesterday was such a bad day - storm wise...we had 3 or 4 tornado drills throughout the entire day - starting from 9am until 9pm. It was crazy how many came through here. They were deadly here in MO - It is always so tough to hear when someone loses their life in a storm. I hate storms - my kids definitely know the drill...when the siren goes they grab their pillows and a blanket, head to the bathroom, and climb into the tub. I gather the animals and shut them all in the bathroom...while my hubby is usually the one running out the door to see what he can see. He also ran down to our neighbors - they are elderly - they are from CA and didn't know what to do during a tornado. He told them to turn the TV up loud and get into the master bathroom. They were grateful that he went to check on them. He is so sweet...he's got such a kind heart.

Hi Patty Ann, we were surprised that she would leave him too... wee were actually pretty mad, but they are family and we knew she had to go to work cause they need the money.

Yesterday my husband got a call from the company that is suppose to start working for next Monday. He was hired over a month and 1/2 ago and had to get his license and then someone was on vacation and now yesterday they said they are doing some restructuring and they aren't sure what his start date will be (or if it will be). He has put his job looking life on hold for 2 months now sicne he was offered and accepted the position. He actually interviewed with them for the 1st time on December 22. And has turned down several interview opportunities because he was told there were no problems and he would be starting work. It is so frustrating and his unemployment will be running out soon.

Ok nough of that.
today is just a 10 hour workday and I think laundry is on the agenda for tonight. On the menu tonight is speghetti squash with some sauted garlic shrimp.
Oh to answer your question. I just do breakfast and lunch for the week and the plan the dinner menu so we will know what we are eating everynight and we made an agreement to not deviate from that when we are not in the modd for what is planned.

Hi Nicky, sorry to hear your husbands new employer is being so flaky -I hope it all works out soon. Your dinner plan of shrimp sounds so yum! I have a quick question for you though, what the heck do you do to a spaghetti squash? I've heard lots of people rave about this so I bought one, but now it's just chillin in the fridge until I figure out how to prepare it. Any ideas on how to cut it and how to cook it would be so welcome!

Hi Jules,
Spaghetti Squash is surprisingly good!

1. Cut squash in half, lengthwise
2. Remove seeds with spoon
3. Cover each half with plastic wrap
4. Microwave both halves together on high for about 12 minutes
5. Let stand until cool enough to handle (I actually hold it with a oven mit so I can handle it before it cools enough)
6. Poor off excess water
6. Scrape with fork to form spaghetti and put into a pan (this is really fun)
7. Add the sauce (only as much as needed) to the spaghetti squash
8. Cook until heated
9. Add a little parmesan cheese
SERVE AND ENJOY!

You can also use a low fat butter alternative (e.g., Smart Balance, I Can't Believe It's Not Butter, etc.) instead of the sauce.

That sounds really good, and super healthy. I'm still not sure though -- do you eat it like spaghetti? Or does it taste more like sweet potatoes, or something like that?

It sounds like you are doing very well. Don't beat yourself up. You are doing a fantastic job! My bf and I take the weekends off from working out and just work out during the week...5 times a week. On weekends we do clean the apartment and things that burn calories..just not anything vigorous. I also live in a 3 storey walk up aparment building on the top floor..so anytime I go anywhere I have to walk up and down 3 flights of stairs!

Keep your head up, and give yourself a pat on the shoulder for doing a great job!

I hope your husband gets a start date for his new job soon - I hate it when employers mess you around like that - don't they realise how stressful it is?!!

No I don't think they do know. It has been terrible for my husband. He didn't sleep at all last night. He called and left a voicemail for the HR person yesterday and again this morning. He doesn't even know if he still gets to start working there. He was suppose to go in next Monday to sign all the paperwork. He was very upset and feeling very down on himself on Monday... Now yesterday he was just mad. It's terrible, but he knows he needs a job and he really does want to work for this company (but is more unsure of that as the days go).
he was finally sleeping in his chair in the livingroom at 5:00 this morning when I was going to go out and exercise (the livingroom in the only place with a dvd player). I didn't have the heart to wake him up to tell him to go to bed.
So I didn't exercise this morning. I also didn't fill my jug with ice cause it would make too much noise - so I don't have my water here either. Hopefully he hears something today. I know he would like the job, but I just want him to get an answer eithr way so he can move on.
