Recipes

Anyone have any good-for-you recipes you want to share?

Here is mine...its easy, fast (about 30 min.), and uses one pan:

Mexican Chicken and Rice

Ingredients

1-1½ pounds boneless skinless chicken breast - cut into bite size chunks
1 bell pepper - chopped
1 small onion - chopped (optional)
1 can chicken broth
1 small bag of frozen sweet corn
Salsa (mild, medium, or hot) - approx. 1 - 2 cups (I usually eyeball it)
Shredded Cheese (I normally use Kraft Mexican cheese...of course low fat is good)
1 - 2 cups Minute Rice (I eyeball it - depends on how much liquid there is)

Directions

Heat oil in skillet (use just enough to coat the skillet). Cook chicken, bell pepper, and onion on medium high heat until chicken is cooked through. Add chicken broth, frozen sweet corn, and salsa. Bring to a boil. Add rice. Remove from heat and cover. Let stand for 5 - 10 minutes. Stir. Add cheese. Cover and let stand for about 5 minutes or until cheese is melted. Sprinkle a little parsley on top for some extra flavor. Enjoy!

*Note...you can make this dish as low cal as you want...substitutions are always good...This is a fast and easy dish to make!

Yummy..that sounds great!!

I love anything with chicken & rice!!

I make a dish that is chicken breast, cream of mushroom soup (98% fat free), rice and water. You an also sprinkle paprika on it. Bake it in the oven and it's great!! My kids even like it.

Sounds awesome! Of course the chicken broth and cheese should be nonfat or lowfat. How about topping it with cilantro instead of parsely? That is what we do here in Texas! I would love to have some veggie recipes, if anyone out there has some. I eat meat, just not very often.

Another good idea...

During Christmas I received two awesome gifts. The first is the George Foreman Rotissiere which allows you to cook all sorts of meats and veggies while the fat drips to the bottom. The second, was a MicroSteamer from my friend who sells Tupperware. I have eaten so many more veggies because they only take minutes to steam in the microwave, and the microsteamer works like a charm!

Sounds Easy

I eat a lot of chicken and finding new ways to cook it is great. I will definitely give this one a try. Recipes with too many ingredients and steps wear on my patience. I think this is one I can't even mess up. Thanks for the info.

Sandollar...Thank you for the recipe. I love chicken and rice, too. I am always trying to find new ways of cooking them together - I will definitely be trying this one out!

I've had one of those steamers for years and LOVE IT!!!!! It works great for cooking baked potatoes and they stay very moist. Just put hte potato on the little shelf bowl (with the holes in it) no water, and pop in the microwave for like 6-12 minutes depending on how many potatoes you have in there and how big they are.

Awesome idea! I have never done potatoes in it before. I am still learning all of its vast capabilities. Mostly I do fresh or frozen veggies in it. Do you have anymore cool tips???
