Fish Recipes Anyone?

I was looking to add more variety to my diet and would love some fish recipes. I just had stuffed salmon tonight and it was fabulous. I am looking for some more things to do with tunafish and some interesting things to do with different filets. I love seafood but would like to make it without breaking my pocketbook! The stuffed salmon set me back $9, so obviously I couldn't do that all the time.

"Fried" fish.....

Well, living in the south of course our favorite fish is Fried Catfish!!

I did find a low fat version of it though:

Baked "Fried" Catfish

Catfish fillets
Egg substitute
Cornflake crumbs


Preheat oven to 400 degrees.
Spray a heavy metal baking sheet or pan with vegetable oil cooking spray.
Dip the fillets in the egg substitute. Roll in cornflake crumbs.
Place on the baking sheet and spray fillets lightly with cooking spray.
Bake about 25 minutes, or until crisp and flaky. Turn over when half done to brown and crsip both sides.

2 grams of fat per serving

You could probably use this coating to bake any type of fish if you like "crunchy" fish.

Fish and Veggie packets..

Another thing I like to do with fish fillets is get a square of alumminion foil, in the center put your fish fillet, mixed frozen veggies (I like the brocolli, cauliflower, carrot mix) spray with non fat butter spray and sprinkle with lemon pepper. Wrap up in the foil and let it bake until veggies are done and fish is flaky. I usually eat this with brown rice. Very yummy! It does get kind of boring after a while, you can always try different veggies & spices though.

Thanks Susie! By egg substitute do you mean Egg Beaters or All Whites? Big thanks for the information about the fish and veggie packets! Now I know what to do with those thin filets that are really hard to cook! Good thing I am going to the store today!

You're welcome!! I think the recipe calls for egg beaters but I beat egg whites would work just as well.

Thanks for the info on the egg whites. Question, does Egg Beaters have the whole egg or are they just egg whites as well?

Sorry...I can't help out on this one. I am not a fish eater - can't stand it. I don't like it to be around me either. I hope that you are able to find something that is of interest.

fish packets II

I use cholesterol free butter and fresh veggies like onions, mushrooms, squash. The key is the seasoning. Zatarains is great and so is Emeril's Essence (BAM!) GRILL the fish for approx. 20 min. Orange Roughy and snapper work well with this. You don't a fish that falls apart.

Thanks Michelle, that sounds awesome! I like the idea of fresh veggies, I used frozen ones in my foil packets last night and the fish took a long time to cook but the veggies were way done!
