Susie the fish packets were great! I love these new recipes, and my son has been literally licking his plate-yea he loves healthy eating!

This is similar to a post above, but worth sending.

I use Talapia filets that I can buy frozen. They are very cheap (compared to other seafood) and store well.

in a tin foil pouch I put 1 to 1 and a half filet's,
add 1/8 cup of diced tomatoes on top of the fish,
Add zuccini and squash (you can use any veggie that you like) to the top
add 1/4 cup of onions (again, if you don't like onions try something else)
1 tsp of olive oil
Basil and oregeno to taste

I cook it at 400F for about 1/2 hour.
The fish and veggies is less than 220 calories

I usually have 1/4 cup of wheat pasta and lo cal sause as a side item, maybe a piece of fruit for dessert.

If you want to be extra healthy, have brocolli instead of the pasta, and a cup of strawberries for dessert.

Trial and error on the veggies and the spices, if you come up with variations of fish and spices, let's all know!

Oh that sounds awesome! I love zucchini. That is what I bought Tilapia. I am definitely going to try this! I have been eating 3/4 Cup of brown rice on the side when I make the fish packets. It is just so easy, toss it all in the oven for about 45 minutes and then come back and dump it on your plate. The other day I got my treadmill workout down before dinner was ready.

I have been cooking our brown rice in low sodium chicken broth. I think it gives it a little more flavor

What a great combination.

Prep your dinner and put it in the oven, then do situps, pushups, walk, jog on the treadmill, etc while it cooks.

You could burn 2-3 hundred calories while you cook dinner, that's impressive.

Fish Seasoning

Just thought I would let everyone know that I found an awesome seasoning for cooking fish at SAM's CLub this weekend...they had sample done with just COD and a lil olive oil and this seasoning by TONES just called Fish and Seafood Seasoning...it was AWSOME!!!!
