The most important thing is getting your heart rate up for at least 30 minutes, that's when you start burning calories. I don't see how you would get soreness from walking.

Have you thought about getting some 2 or 3 lb hand weights to carry while you're walking? That might work out your arms while you're walking so you'll get upper body & lower body at the same time.
