Overnight Brown Rice Pudding

Yesterday I checked online to see if I could find any recipes for a healthy rice pudding that could be made overnight in the crockpot so you could have it for breakfast. I couldn't find anything that fit my specifications--most recipes had way too many fattening ingredients.

So I made up my own recipe, tried it last night, and just had a very satisfying bowl of sugar-free warm brown rice pudding for breakfast.

The recipe is not perfect yet--the brown rice is a little on the crunchy side, but maybe if I had used a more quick-cooking variety, rather than regular long grain, it would be smoother.

Anyhow, here's what I used:

1.5 cups of brown rice
2 cups of skim milk
1 cup of natural applesauce (the kind that's just apples and water, no sugar)
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp nutmeg
4 small packets Splenda

Mix together in crockpot and cook on low for about 8 hours.

You can also add other fruit besides the applesauce. I tossed in a handful of dates and two bananas that were getting overly ripe.

This made a huge amount of rice pudding. I would probably make less next time.
