Whole Wheat Pancakes

My husband and I had awesome whole wheat pancakes this morning. I got the recipe from the Web, but changed it to make it work for me.

Also, instead of eating the pancakes with butter and syrup, we had applesauce, and it was great!

Even though these pancakes are whole wheat, they are very light and fluffy.

This recipe made 9 smallish pancakes. According to Fitday.com, 4.5-inch whole wheat pancakes are 60 calories each. These pancakes should be less, because I substituted Splenda for sugar.

1 cup whole-wheat flour
2 tsp. baking powder
1/2 tsp. salt
3 small packets Splenda
3 T. oil
1 C. nonfat plain yogurt
2 eggs

Mix wet ingredients (yogurt, oil, eggs). Add dry ingredients. Stir just until mixed. Let the batter sit in the bowl for a few minutes before cooking pancakes on the griddle--you'll see the batter rise.
