Thumbs up Italian chicken with noodles

I'm sure there are ways to cut the calories in this recipe, but I haven't tried. Still, it's one of my favorite dishes

Sauté boneless skinless chicken breast in skillet with Italian dressing. (I never measure; I just dump until it looks good, but probably @ 1-2 tbsp per serving)

Boil egg noodles as directed. (This is where I think you should be able to cut a lot of calories, find a better noodle to use…) Because of the size of our family, I just boil the whole bag…

Strain noodles and add ˝ stick margarine. (again, I’m sure you could cut calories by using a better choice of margarine than I do.) Then add ˝ can of parmesan cheese.



I tried to figure the calories for this, and this is what I’ve come up with:

Chicken 161 calories (this is considered “fried”, and based on 3 oz serving)

Egg noodles 213 calories for 1 c serving

Margarine 44 calories based on 2 tbsp

Parmesan cheese 102 calories based on 1 tbsp. (which if you prepare as directed above, probably isn’t the correct amount). However, instead of doing everything together, I simply get my noodles out before I add everyone else’s parmesan cheese in.

Total Calories per serving 520. Probably not the greatest, but if you can find a way to cut back the caloric intake, it’s a DELICOUS meal!!!!!!


P.S., this chicken is also great with a salad!
